Sweet potato pancakes

Yes yes yes, it's sunday! That means: time for pancakes! Pancakes make everthing better, especially during the exams. These sweet potato pancakes are absolutely the best way to kickstart your morning and... they are heavenly. I made them for my family this morning, and they loved them!


INGREDIENTS (10-12 small pancakes)
- 140gr cooked sweet potato
- 2 eggs
- 1 scoop whey coconut powder
- 70ml coconut milk
- 2 tsp baking powder
- cinnamon
- coconut oil




PREPARATION
Peel the sweet potato, cut into pieces and cook for 8-10 minutes.

Mix all the ingredients in a blender.

Heat some coconut oil in a pan. Cook the pancakes on medium-low heat golden brown on both sides.

Add fruit to taste, I used banana and coconut powder.
